This recipe is super tasty and packed with fresh vegetables to help you and your family get your 5-a-day! Why not make a bit extra and have it for lunch the next day. Recipe makes - 4-5 portions Preparation time - 25 minutes Total cooking time - 45 minutes Ingredients for the Pasta Bake 6 Pork Sausages (or chicken or vegetarian sausages if you prefer) 5 Rashers of Bacon 6 Medium Closed Cup Mushrooms 5 Large Fresh Tomatoes 3 Bell Peppers (yellow or red) 6 Spring Onions 1 Large White Onion 3 Large Garlic Cloves 1 Tin of Tinned Tomatoes 1 Teaspoon of Tomato Puree 1 Teaspoon of Dried Mixed Herbs 1 Tablespoon of Worcestershire Sauce 2 Tablespoons of Sweet Chilli Sauce 150ml of Chicken Stock Salt and Pepper to taste 15g of Butter 200g of Dried Fusilli Pasta 30g of frozen peas 100g of Grated Cheddar Cheese for the topping Step 1 - Prepare the vegetables for the pasta sauce Firstly, take the large tomatoes, chop them into segments, and place in a large pan. Then, take the bell peppers and spring onions and cut them into small pieces around 1cm in diameter and add to the pan. After that, take two cloves of garlic and chop them roughly or grate the cloves into a paste if you prefer, then add to the other ingredients. Step 2 - Blend Add the tinned tomatoes, sweet chilli sauce and hot chicken stock to the pan and place on a medium heat. Once the contents of the pan has simmered for five minutes take off the heat. Then take a hand blender and blend the contents of the pan until it is of a smooth consistency. Season with the dried herbs, black pepper, and taste. Top tip: Always taste the sauce before adding extra salt as the chicken stock can be salty! Step 3 - Let's get cooking! It's now time to cook the meat and other vegetables to go into the pasta bake. For a healthier option, cook or grill the sausages in the oven according to the cooking guide on the sausage packaging. Whilst the sausages are pre-cooking in the oven, take the rashers of bacon and cut them into small pieces using cooking scissors and place in a frying pan with a knob of butter. Cook on a low heat on the hob to ensure the butter and the bacon juices don't evaporate. Once the bacon is cooked, take it out of the pan and set aside in a bowl ensuring the butter and any juices are left in the pan to use later. Next cut up the mushrooms, the one remaining pepper, onion and garlic ready to fry off. You can cut these up into chunky or small pieces, whatever you prefer! After you have cut up all of the veg it's time to cook the pasta. This recipe uses dried pasta, but you can use whatever pasta you prefer. Bring the water to the boil and cook according to the packet instructions. The sausages should be cooked by now too! Take them out of the oven and set aside for 10 minutes to cool slightly. Whilst the pasta is cooking, add the vegetables to the pan used to cook the bacon and fry off in the butter and bacon juices until they are softened. Step 4 – Finish off the sauce Now your sausages have cooled slightly, cut them into rounds about 3cm long. Add the sausages, bacon and cooked diced veg into the pan with the pasta sauce. Place on a medium heat on the hob and cook for around 5-10 minutes adding in the Worcestershire Sauce and frozen peas and tasting to ensure the sauce doesn't need any more seasoning. Step 5- Assemble It's time to assemble the pasta bake! Take the pasta sauce with the sausages, bacon and veg added and ladle it into the cooked drained pasta. Stir in the sauce to ensure all of the pasta is covered, then place it into an ovenproof dish. Spread the sauce and sausages around to make sure everyone has a tasty serving with all the good bits in! Sprinkle the grated cheese on top of the pasta and add a little more herb seasoning and black pepper if you wish! If you like a bit of spice why not sprinkle some Cayenne pepper on too. Step 5 - Bake Place the pasta into the oven at 180°c and bake for around 10 minutes until the cheese is melted and has started to bubble. Ensure the dish is cooked thoroughly before serving. Step 6 - Serve Serve the pasta with homemade garlic bread and salad for a perfect family favourite!
